Description

A hearty bread with a delicious crumb. It is a long-fermented dough and using an old tradition of using a little bit of dough from the previous batch, called Pate Fermenté, (French for fermented dough). This, in conjunction with the home-milled whole wheat and dark rye, creates a more complex flavor profile. The long-ferment process and the Pate Fermenté also help make the bread a lot more easily digestible, very much like a sourdough bread.
